Frittura di Calamari


Fried squid rings with marinara dipping sauce.

Fried Calamari with Marinara Dipping Sauce:
(serves 2-4)

1 lb squid rings, thawed and dry if frozen
1/2 cup flour
2 tbs Old Bay seasoning (or blend of seasonings of your choice)
1 tbs chopped parsley
Lemon, chopped, for garnish & to squeeze over fried rings
Prepared marinara sauce
Peanut oil or canola oil for frying
Salt & black pepper to taste
Paprika for dusting

Directions:
Heat oil to about 375, or to the "fry" setting on a deep fryer. Thanks to Kelley and her inventive dumpster diving on my behalf, this old-school "Chef Pot" is mine, and though it doesn't get used often, it's a lot cleaner than frying on the stovetop.

Coat squid rings in seasoned flour - I recommend doing this in a large mixing bowl or a large freezer bag. Strain with a slotted spoon to remove excess flour and then drop into fryer basket or directly into hot oil. Fry until golden brown and crisp. Remove, drain on paper towels and season with salt and pepper, garnish with paprika and parsley. Serve immediately.

what a delicious reciepe, well anyway in my case I love all seafood, fish, shrimp, octopus, squid, in a occassion I tasted a dish called "Paella" with all kind of seafood, simply delicious.
