Classic Iceberg Wedge Salad with Blue Cheese and Bacon

This is the ever-present steakhouse salad, refreshing and crisp with enough bacon and blue cheese to be delicious, and if that isn't enough, it is the perfect dinner when a hot oven just isn't an option. It's also good (confession here) when you had a large lunch with a friend and can't imagine an entire meal.

Or, of course, it could be a lovely starter or side to a meal.

I kept it classic and simple, but you could add chopped tomato, candied nuts or whatever you would like.

Classic Iceberg Wedge Salad with Blue Cheese and Bacon:
(serves 4 as a starter, 2 as a light meal)

1 head iceberg lettuce, cleaned and outer leaves trimmed
1/2 c (approx) chunky blue cheese dressing (go for something natural here from the dairy case)
Crumbled blue cheese
4 strips premium thick-cut bacon, cooked and crumbled
Sea salt and fresh ground black pepper to taste

Directions:
Cut iceberg into 4 wedges, drizzle dressing over top, top with blue cheese crumbles and bacon, salt and pepper to taste.

Wish we had salads like that at our steakhouses! We're lucky if we get a slice of limp lettuce and a pale tomato!!
Your salad looks yum!

It's so funny that iceberg lettuce is showing up on haute menus everywhere. Once upon a time, iceberg lettuce was just "lettuce" in America, the only kind sold in grocery stores. Mesclun and baby mixed greens and the like were a much later innovation.

i love it that u make the most ordinary veggi so special. i usually skip iceberg lettuce when grocery shopping cos i dont think it hs much flavor. definitely give it a try. btw, love the presentation too.....serve the big wedge with dressing. thx!

Thanks Freya and Patricia!

Terry - I know! I have seen iceberg salads on menus for $16. I mean, really?? You are right that we have become all about mixed greens, baby greens and all manner of exotics, which I guess is why this iceberg wedge was so retro but good. Food is fashion - the new is old and the old is new. :)

Hi LuLuLu! Thanks for stopping by. Thanks for the sweet words!

This is a classic. I don't know why but I always order it in a resturant~ but never make it at home.
Now I will.

Hi Sandi!

I know - I always order it @ restaurants, but when I thought about how easy it is...why not @ home, right?
